6 cups ripe tomatoes, peeled and chopped
1 medium to large head cabbage, chopped
2 large onions, chopped
3 peppers, chopped
1 c. salt
1 qt. vinegar
2 cups sugar
2 tbsp. celery seed
2 tbsp. mustard seed
1 medium to large head cabbage, chopped
2 large onions, chopped
3 peppers, chopped
1 c. salt
1 qt. vinegar
2 cups sugar
2 tbsp. celery seed
2 tbsp. mustard seed
Combine tomatoes, cabbage, onions, peppers and salt. Let set overnight. The next day drain, add other ingredients. Cook 1 hour on medium heat. Pour in jars and seal. Water bath 20 minutes.
I made this easier by not salting the tomatoes which were already falling apart, the knife was crushing them fairly well as it was. I also pulsed the veggies in the food processor since it can chop finer than I can. I ended up with 9 pints.
